Determination of Quercetin in the Presence of Ascorbic Acid using Carbon Nanotube-Modified Electrodes

Electrodes for the determination of quercetin in fruits and vegetable have been developed to improve the selectivity and reproducibility of quercetin.The glassy carbon electrodes were modified with the carbon nanotube(CNT) and nafion mixture in ethanol by spin coating method. The modified electrodes (GC/nafion+CNT) were used to determine quercetin by osteryang square wave voltammetry(OSWV). The GC/nafion+CNT electrodes enabled selective determination of quercetin at pH 3.78. At the optimal conditions, quercetin concentrations in an excess of ascorbic acid were linear over the range of 5.0×10-8 ~ 3.0×10-6M with a correlation coefficient of 0.997. The method exhibited a good reproducibility and stability with a detection limit of 5.0×10-9 M. The relative standard deviation was 9.4 % for 5.0×10-5 M quercetin (n=15). When the electrode was stored in air, the stable oxidation peak current of quercetin was obtained for 3 days. The amount of quercetin in the onion was8.260.9 nmol/g.
