Color additives are used in a wide variety of foods and the use is strictly controlled by food sanitization law. Colors permitted for use in foods are generally classified as certified or exempt from certification. Certified colors are man-made and there are nine certified colors approved for use in the United States. Color additives that are exempt from certification include pigments derived from natural sources. Not all coloring agents are harmles and adverse side effects were reported for food colors. The colors were examined for their inhibitory activities against protein tyrosine phosphatases; PTP1B, YPYP1 and TC-PTP. Some of the colors exhibited low micromolar range of IC50 values.
