Characteristics of Ultra High Molecular Weight Poly-γ-Glutamic Acid and its Applications

Poly-γ-glutamic acid (γ-PGA) is an anionic, water-soluble, safe biomaterial that is naturally synthesized by Bacillus subtilis, and the α-amino and γ-carboxy groups of D- and/or L-glutamic acid are polymerized via γ-amide linkages. Its multifunctionality, biodegradability, nontoxicity, compatability and edibility have made it a promising biopolymer in the various industrial fields. Since the discovery of Bacillus subtilis (chungkookjang) that produces high molecular weight γ-PGA, specific applications have continued to be developed. Recently, we have found that ultra high molecular weight of γ-PGA produced from Bacillus subtilis (chungkookjang) shows a unique characteristics and increases density, Ca-solubility, immune stimulating ability. Interestingly our results suggest that higher molecular weight g γ-PGA induced more innate immune responses in macrophages and dendritic cells (DCs) than lower molecular weight γ-PGA.
