Panax ginseng has been used as functional food and herbal medicines for thousands of years worldwide, especially in Korea and China, owing to its medicinal properties. The biologically active components of ginseng are called ginsenosides, and more than 40 different ginsenosides have been identified and isolated, all with several pharmacological effects. There are several methods for enhancing the bio-active properties of ginseng and variety of commercial ginseng products available, such as white, red, sun, and black ginsengs. Recently, our group developed a novel ginseng extract by microwave-assisted processing. This novel microwave processed ginseng extract has increased content of ginsenosides Rg3, Rk1, and Rg5. In this study, we propose a microwave processing Panax ginseng to increase biological activity.
