Phenolic acids occur widely in the plant kingdom and are to a large extent responsible for the stability, colour, flavour and nutritional quality of plant-derived food. Antioxidant compounds play an important role in health protection against oxidative degenerative diseases such as cancer and heart diseases. Additionally some phenolic acids possess interesting photochemical properties, making them attractive ingredients for applications in sunscreen creams. Most phenolic acids, however, are susceptible to degradation induced by light, oxygen and metal ions. We report here the stabilisation of three phenolic acids namely: caffeic, p-coumaric and ferulic acids into zinc basic salts (ZBS). It has been confirmed by PXRD, FTIR and solid-state Uv-Vis spectroscopy that the organic moieties are stabilised in the interlayer space via electrostatic interactions and that they retain both their structural integrity and chemical reactivity.
