Metal-proteinates, chelate complexes of soluble metal ions with amino acids and/or partially hydrolyzed protein, are known to protect the trace minerals in the metal-proteinate and absorbed into the biology system by peptide uptake pathways rather than the normal metal ion uptake mechanism. While they are popular in agriculture, the structure and chemical properties are still not clear. Experiments were conducted to characterize metal-proteinates. Metal-proteinates were prepared by reacting Alcalase-treated soy digest with corresponding metal ions, such as Fe(II), Fe(III), Cu(II), Zn(II), Ca(II), Mg(II) ions. These metal-proteinates were characterized by FT-IR, UV-Vis and X-ray diffraction spectroscopy. From FT-IR spectra, the COO- and NH3+ functional groups of proteinates were shifted by metal chelation. UV-Vis spectra of Fe(II), Fe(III) and Cu(II) ions were also changed upon chlelation, while Zn(II), Ca(II) and Mg(II)-proteinates showed no such changes. XRD spectra showed some crystallinity of metal-proteinates.
